Add model card and image-classification metadata

Hi! I'm Niels, part of the community science team at Hugging Face.
This PR improves the model card for the Jumbo models. It adds the image-classification pipeline tag to the metadata and provides a structured description including links to the paper and the official code repository. It also includes performance results on ImageNet-1K and sample usage instructions for running evaluations and visualizations.
